We work with local farms and ranches for our sourcing of fresh, naturally-grown ingredients and grass-fed, grass-finished meats.

Clean

We say no to additives, preservatives, and artificial ingredients to ensure our scratch-made dishes are as nourishing and wholesome as possible.

Transparent

We carefully follow our ingredients from farm to kitchen, and always take careful consideration when selecting our sourcing partners.

Flavorful

We use seasonings and innovative recipes to bring out flavor because food should be delicious too!

Our guiding principles

The Thomas Cuisine Way

Our founder Thad Thomas liked to say “doing the right thing matters.” This principle guides everything we do — from taking care of our team to providing genuine service to our partners. Our focus is not on being the biggest but the best.

What makes us different

Thoughtful Sourcing, Trusted Partners

Our team of culinarians and dietitians focus on thoughtful sourcing, quality ingredients, and nourishing meals. We never outsource our food production and management. Through our trusted partnerships with local farms and ranches, like Central Montana Beef, we make a REAL food difference.

Ted Teele

CEO, Longevity Community Consultants and BrainBoosters of America

Ted Teele is a mission-driven entrepreneur committed to redefining how we age. With a BA and MBA from Harvard and more than 25 years as a CEO, Ted brings a wealth of leadership and innovation to his current roles as:

  • CEO of Longevity Community Consultants and BrainBoosters of America, and

  • Chief Strategy Officer of the Longevity Day Club

From Health Crisis to Visionary Innovator

In 2019, after undergoing a quintuple bypass, Ted immersed himself in the science of longevity. His personal transformation led to a professional calling—developing the concept of Longevity Communities, which will make it easier and more enjoyable for seniors to enhance their cognitive skills and live healthier, happier, and longer.

Together with his partner Pilar Carvajal, Ted expanded the concept to include Longevity Day Clubs—for seniors who wish to age in place but still wish to enhance their cognitive skills and live healthier, happier, and longer.

A core feature across both models is the BrainBoosters Club, which uses Scientific Wellness and the “Community” concept to make it easier and more enjoyable to improve cognitive skills and potentially delay, slow, or prevent dementia.

Track Record of Innovation

Before launching his longevity ventures, Ted led Touchtown—then the leading resident and team member engagement platform for senior living—as CEO. Under his leadership, the company grew rapidly and profitably. Touchtown was acquired by Uniguest in 2019 and is currently utilized (under the Uniguest brand) by 3,000 senior living communities.

The 2025 Well-Being ThinkTank Session

At the ThinkTank, Pilar and Ted will present three pioneering initiatives:

  1. Transforming an Orlando-area Assisted Living facility into a Longevity Community

  2. Launching the world’s first Longevity Day Club—also in Orlando

  3. Creating BrainBoosters Cognitive Enhancement Club at a Life Plan Community in Marin County, California
(Note: BrainBoosters will also be a part of the first two initiatives)

Pilar and Ted look forward to dialogue, collaboration, and feedback from fellow ThinkTank participants as they bring these transformative models to life.

Timothy Harlan, MD

Founder, George Washington Center for Culinary Medicine

Timothy S. Harlan is board certified in internal medicine and lives in Washington, DC. His love of food began as a teenager working in the restaurant business. Starting as a dishwasher, he worked his way up to managing his first restaurant by the age of eighteen and owning his first restaurant at twenty-two.

After closing the restaurant he began pursuit a degree in hotel and restaurant management but events led him toward medicine and the decision to become a physician.

Dr. Harlan went on to study medicine at Emory University. Early in his career he noticed a lack of knowledge in the medical field around food, eating healthy and eating well. Neither patients nor health care providers understood much about a healthy diet. Patients, it seemed, were usually told not what they could eat but, rather, what they could not eat.

He served as Associate Dean for Clinical Services at Tulane University School of Medicine and was the founding director of the Goldring Center for Culinary Medicine, the first of its kind teaching kitchen operated by a medical school.

Dr. Harlan is an Associate Professor of Medicine at George Washington University and leads the Culinary Medicine Program team advancing both research and education. He helps lead the American College of Culinary Medicine, the organization that provides professional training, education, curriculum and certification in Culinary Medicine to academic medical centers and culinary schools as well as community members, healthcare and foodservice professionals.
